2 onions, chopped
2 cloves of garlic, chopped or pressed
1 1/2 cups dried rinsed lentils
2 carrots, chopped
1 rib celery, chopped
5 cups veggie broth
1 cup water
2 tablespoons olive oil
2 teaspoons of soy sauce
Saute onions and garlic in olive oil until onions are almost translucent. Add carrots, celery and soy sauce and saute for a few minutes to warm. Add lentils and stir for about a minute. Add broth and water (or you can use all broth and chicken broth works fine, too) and bring to a boil. Then turn heat down and simmer for 25-30 minutes.
Serve and enjoy!
